How to make a cup of hand-brewed coffee?

Water powder ratio: 60g/ L. It is recommended to start with this ratio for all hand and bubble recipes, but be sure to do some experimentation to find your preferred gouachine ratio.




Grind size: medium/fine sugar size, suitable for 30g coffee with 500g water. For a single cup, grind it more finely; Conversely, for larger portions, grind them coarser.




1. Weigh the beans and grind them just before brewing.




2. Boil fresh drinking water suitable for brewing coffee and low in minerals.




3. While the kettle is heating up, place the filter paper in the filter cup and wet it with a little hot water. This will help to reduce the taste of the paper into the coffee and also raise the temperature of the filter cup.




4. Pour the coffee powder into the filter paper, place the filter cup on top of the pot or cup, and place the whole brewing equipment set on the electronic scale.


5. If you use a hot kettle to brew directly, bring the hot water to the boil and wait about 10 seconds before brewing. If you use a hand pot, pour the hot water into the pot immediately.




6. Use an electronic scale and pour in about twice the amount of hot water. Just make sure the hot water is enough to soak all the ground coffee. Pick up the filter and turn it around to make sure all the ground is soggy. You can also carefully stir the coffee layer with a spoon. Wait 30 seconds before applying the next injection.




7. Slowly pour the remaining hot water into the coffee layer, paying attention to the weight on the electronic scale and the amount of water previously injected. Pour water into the middle of the coffee layer, trying not to pour it over the edge of the colander, so that the hot water doesn't go through the coffee layer and runs straight down the pot.




8. Add enough hot water so that the coffee level is about 2 to 3 cm below the edge of the filter. Gently stir the mixture with a spoon.




9. Allow the water in the filter to continue dripping until it appears to be empty. The surface of the coffee layer in the filter should appear relatively flat.




10. Discard the filter paper and grounds, remove the filter cup, and enjoy your coffee
